- Finely chop carrots, celery, onion, and fennel.
- Heat oil in Wok or a large pot over medium-high heat. Add carrots, celery and onion; cook, stirring often, until soft, about 5 min.
- Stir in fennel, crushed tomatoes, and broth. Cover; bring to a boil. Remove lid and reduce heat to medium-low.
- Stir in couscous, dip mix, and aioli mix. Simmer until couscous is tender, about 10 min, stirring often. Stir in beans until heated through, about 2 min.
- Divide between 8 bowls to serve.
Slash prep time and chop all the veggies using a food processor.
If you can find the Sardinian pasta “fregola,” use it in this recipe for a more traditional feel. We use pearled couscous, which is more widely available, but feel free to try orzo, too.
Serve with 1⁄2 cup beans, your choice, adding them to your bowl of soup, with 2 cups leafy greens and 1 tbsp Epicure Dressing, your choice.
