Laurie Johnson created this recipe when she suddenly craved Thai pizza. She shares that this recipe even tastes good the next day—no reheating required! (We love a cold pizza moment.) The coconut milk and peanut butter help tame the heat, making it a great choice for those who prefer a milder spice. Laurie's original recipe uses 1 cup Pepper Jack and 1 cup mozzarella cheese, but feel free to top your pizza with any shredded cheese you like.
Toppings (optional): Minced Garlic, fresh cilantro, Thai basil, red pepper flakes
- Preheat oven to 375° F. Line 2 Sheet Pans with Sheet Pan Liners. Place crusts on pans.
- Slice lime in half. Using 2-in-1 Citrus Press, squeeze juice from half the lime in a bowl. Add 2 tbsp seasoning, coconut milk, and peanut butter; stir to combine. Spread sauce over both crusts.
- In another bowl, toss shrimp with juice from remaining 1⁄2 lime and remaining1 tbsp seasoning. Set aside.
- Slice vegetables into bite-size pieces. Top pizza with shrimp and vegetables. Add additional toppings, if desired. Sprinkle with cheese.
- Bake 15-20 min, or according to cauliflower crust package directions.
