Made with lean ground beef and canned black beans, these taquitos are on the table quickly with the help of the microwave. Kitchen workhorses, Steamers easily replace 1 or 2 pots ‘n pans. For a crispy finish, use an air fryer. Because these are a little spicy, tame the heat with cool ‘n creamy Roasted Garlic Aioli or Guacamole.


Ingredients
1 lb (450 g)
lean ground beef
2 tbsp
tomato paste
1 tbsp
1 can (14 oz/398 ml)
unsalted black beans, drained and rinsed
10
small (6") whole wheat tortillas

Preparation
  1. Preheat air fryer to 390° F. 
  2. In Multipurpose Steamer, combine beef with tomato paste and marinade mix. Cover and microwave on high 4 min, or until cooked. Strain excess liquid.  
  3. Add beans to steamer; use Ground Meat Separator to coarsely mash beans. 
  4. Divide mixture between tortillas. Roll up and arrange in air fryer, seam side down. Air fry 4–5 min, or until crispy. Depending on the size of your air fryer, you may need to do this in two batches.  
Tips

This seasoning is quite spicy! Serve with Guacamole, Roasted Garlic Aioli, or sour cream to offset some of the heat.

For a vegetarian alternative, use 1 lb (450 g) chopped mushrooms or an extra can of beans.

Swap leftover Chicken Barbacoa or Rotisserie Chicken for ground beef.

Perfectly Balance Your Plate
