Topping (optional): squeeze of fresh lime
- Halve or quarter larger cauliflower florets; they should be about the same size.
- To Wok, add cauliflower, coconut milk, crushed tomatoes, and seasoning. Cover, bring to a boil. Simmer 8-9 min, stirring occasionally, until cauliflower is tender-crisp.
- Gently stir in beans and cook for 2 min, until heated through.
- Remove from heat; stir in yogurt and then spinach until wilted. Add a squeeze of fresh lime, if desired.
